Not being a purest, I put cream and sugar in my coffee, I may miss some of the subtleties that Seth does not. However, as soon as I started grinding these beans I could tell that I was in for a treat. The aroma that wafted up from the grinder was one of rich, dark, chocolate. The taste of the hot coffee was exactly the same. It is full bodied and very smooth. I highly recommend it! (Side note; it is actually Huehuetenango, pronounced waywaytaynahngo)
One other thing I would like to add, if you are not buying whole bean and grinding it IMMEDIATELY before brewing, you are missing out. Also, if you are using a cheap blade grinder, toss it out. I just bought a burr grinder (Cuisinart), and WOW, does it make a difference. The grind is now consistent and doing it right before brewing makes it the freshest cup of coffee I have ever made. If you are sophisticated enough to use Seth for your coffee, you owe it to yourself to "up the ante".
